This is one of my quick pasta recipes in spring--it takes only 20 minutes and I make it at least once a week when ramps are in season.

 

Ramps are wild baby leeks that appear in the spring. They have garlic-flavored bottoms and delicate green leaves12. If you don't have ramps, you can use minced garlic and your favorite greens as substitutes1.

1 tablespoon olive oil

 

½ bunch ramps - leaves washed, dried, and finely chopped

 

salt and freshly ground black pepper to taste

 

1 tablespoon freshly grated Parmesan cheese, or to taste

1 (16 ounce) package spaghetti

 

1 tablespoon olive oil

 

½ bunch ramps - leaves washed, dried, and finely chopped

 

salt and freshly ground black pepper to taste

 

1 tablespoon freshly grated Parmesan cheese, or to taste

 

Ingredients

Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.

 

Meanwhile, heat olive oil in a skillet over low heat. Add ramps and cook until softened, 3 to 5 minutes. Add cooked spaghetti and season with salt and pepper. Sprinkle with Parmesan cheese and serve.
