Here is a second and more successful attempt at making vegan cinnamon, nut, raspberry, and raisin rugalach. This time, I photographed the process and Heather wrote down the ingredients and the key preparation steps. I hope and intend to write down the recipe...;-)
Note: Last time, the dough was a pie dough. Those rugelach were good but not good enough.
This time we made a flaky puff pastry dough. It's the one that Heather uses for other pastries. It's much more like my Grandmothers's ruggelach. They never used recipes. Their cookies and cobblers were vegan simply because dairy products were not part of a meat meal and the recipe doesn't include eggs or meat fats.
I may have added too many raisins because I Love Raisins!!!
No, after lots of taste testing with volunteers, the amount of raisins is perfect.
