Frozen halibut pieces in a little olive oil, topped with slices of italian cheese, fire roasted diced tomatoes, and fresh Italian (flat leaved) parsley fresh from a flower pot outside the kitchen door. These are covered with tin foil and roasted in the oven. The fresh parsley flavor is really wonderful on this dish.
