The part of the eggplant that we eat is really a fruit. It contains the seeds. So is a tomato. Carrots are a root vegetable and lettuce is also a vegetable since we eat only the leaves...
These delight eggplants have been diced, and are now in the frying pan with some African blue basil from my garden and Mrs Dash salt free spices for the table...;))
P.S. They were delicious!
