Butterflied Chicken

I got a young chicken and cut out the backbone and flattened the bird. I seared the skin side in olive oil, flipped it over and seasoned the bird with my favorite seasoning. I baked it in the pan and with 15 minutes to go I painted the bird with a glaze imade out of soy sauce,mango and coconut sauce, ground ginger, vodka sauce and Thia Sweet Chili Sauce. I madefour meals out of it but I could have eaten the whole thing.
