In the early days of Portuguese colonization sugar was the main source of wealth, and continued to be for over a century. At this time the northeast was the richest area of the country and much of this can still be seen in the opulent colonial architecture of places like Olinda.
Sugar plantations transformed the countryside and rural communities. They were worked by slaves from Africa. As a result they had a lasting impact on the region economically, socially, ethnically, environmentally and even gastronomically.
