U is for Uncle
Dad was a very good cake maker and usually made us a batch of cakes on a Sunday afternoon when it could be guaranteed that Mum's only brother, Ray, dropped in after visiting our grandparents. He would arrive as Dad popped the plate of cakes on the tea table. They soon became known as 'Ray cakes'. The recipe is - weigh 2 eggs, add their weight in butter, sugar and flour but replace a cup of the flour with a cup of cornflour. Mix all together and bake in fairy cake cases. When cool ice and decorate.
