Organic Banana Bread

Had a bunch of really nice overripe organic bananas (because Vons insists on wrapping that sticky tape around them, so you cannot select the number of bananas you really need) so I used the good old recipe from "Joy of Cooking" for Quick Banana Bread. A good thing about the recipe is the addition of grated lemon peel; that adds the nicest little flavor.
