TORREJAS EN MIEL: A … Exceptional

 

If there is a better version of this dessert, it would get my yet-to-be-awarded “A+”.

 

Torrejas are Guatemalan sweet rolls called molletes that are stuffed with custard and cheese. They dipped in beaten egg and then fried. Think stuffed French toast.

 

Hot sweet syrup is poured into the bowl with the torreja. Miel means syrup in Guatemala. Honey needs the word “bee” added … miel de abajas. The syrup for the torrejas is not honey.

 

The problem with torrejas is the filling is often either undetectable or missing, the syrup characterless and watery, the roll soggy. Not so here.

 

The pillow roll, warm from the fryer, was stuffed with fresh white cheese cushioned by thick custard. The sensuous scent of cinnamon filled the air even before the server set the dish on the table. The syrup was a satisfying symphony of spice. If you have never tried these, IMO, this is the place to do it.
