Third stretch & fold
It has definite dimensions but it's still sticky and the volume after each stretch & fold is about the same.
I forgot to flip it over before the S&F this time. I'll do it once more then set it in the banneton for tis final 3-4 hour proof.
How do you know when you've done enough S&F? I want to be sure I do it an adequate number of times but I also want enough vigor left in the yeast for the proof and the oven spring? This sourdough is a very lengthy process.
