Two Egg Tango

This is a 2 egg composite.

 

On Griddle:

-crack 1 egg in a large pastry cutter ring

-toss on an ounce of minced ham and a good grind of black pepper

-as white sets up, give a quick scramble

-drop second egg right in the center of the scramble

-cover with tall lid (I toss a tsp of H2O under for steam) until cooked to desired "set"

 

Build on a bagel base, add some ham, the egg and garnish, voila!
