Poutine: the national dish of Quebec.
Properly done, with hand cut fries, squeaky, salty cheese curds, finished with St. Hubert's gravy and left to become one masterpiece of tastiness. This is one of the things that I miss and cannot get anywhere else but in Quebec. Cheap substitutes found in other provinces don't count.
