The BEST fish Cakes in the world are KAMABOKO, hands down...... It is made from Snapper, and other fresh white fish. It is springy, slightly sweet, and just awesome! U.S. Customs opened all 6 of the Kamabokos, so we had so much to eat, before they go bad!
