Cod drying racks

Lofoten Islands, Norway.

 

February and March is the major cod fishing season on the Lofoten islands, Norway.

 

After the cod is gutted the headed and bodies are hung in the cold air to dry over the coming months.

 

A large proportion of the dried fish is exported to Nigeria, where it is known as stockfish and used in a wide variety of dishes.
