Recipe No. 38 of 50 for 2025. I have not had meatloaf since I was a child, but this weekend we made miniature meatloafs that were honestly one of the best things I have had in some time. Cooking them in large-muffin tins was key, because you were able to get a little bit of the baked edge around all sides, similar to the edges of a brownie. The inside was tender and flavorful- definitely making this a part of the recipe rotation!
