Recipe No. 31 of 50 for 2025 - Street Corn Chicken

Recipe No. 31 of 50 for 2025. For Father's Day we made a Mexican street corn casserole: chicken thighs coated with corn, mayo, sour cream, and spices and then baked for 30 minutes. To finish it off (not pictured) we added queso and herbs. This is also great for food prep!
