Jaggery
Jaggery - commonly known as 'Gur' in hindi or urdu. It is a traditional non-centrifugal sugar. And it is also known as sugar of the masses.
It is prepared from sugar cane. The final product contains sucrose, invert sugar and mositure. Largely consumed in south east Asia.
It is prepared by heating sugarcane juice in a furnace over long period and recrystalised after cooling.
This is one such plant at my cousins place.
