Aloo Mutter
Lunch for tomorrow. Recipe from www.globalgourmet.com
1 tbs ghee or butter
1 small onion, chopped
3 cloves garlic, minced
2 tsp finely chopped ginger
1 tsp ground cumin
1/2 tsp ground turmeric
1/2 tsp ground coriander
15oz can of crushed tomatoes
2 red potatoes, diced
1 1/2 cups frozen peas
1 tsp garam masala
2 -4 tbs fresh cliantro, chopped
Saute the onion and butter over medium-low heat for 5 minutes. Add the garlic and ginger and saute for one more minute. Add the cumin, turmeric and corriander; stir well.
Add the tomatoes and bring mixture to a boil. Add the potatoes, cover and simmer for 10 minutes. Add the peas and cook for 10 more minutes. Turn off the heat and add the garam masala.
Just before serving, sprinkle the fresh cilantro on top.
I used a can of diced tomatoes instead of crushed and I used a ginger paste instead of freshly chopped ginger.
Tasty, but not real hot. I'll add some hot sauce when I have this for lunch.
