New England Cod

Butternut Squash, Autumn Greens, Black Truffle Oil

 

Being from Boston, I eat a lot of fresh cod...and this was right up there in quality/freshness.

 

I'm not generally a vegetable lover; but these had flavors that were like "vegetable flavor squared." I mentioned that they grow a lot of their own veggies. These were cooked..each vegetable individually in a pressure cooker.no loss or "mingling" of flavors.

 

I'm not a huge fan of "foams" and super modern cooking style; but this dish worked very well.
