100% tybalt w white rollermill levain SD

This was one of my best loaves, low protein stoneground not easy to produce this crumb on liquid levain without manipulation like fridge proving and stiff levain.

 

200g white rollermill levain

500g white stoneground tybalt (2010 harvest tybalt 3-4 months old)

Don't remember the water amount.
