Salt Marsh Lambs
Sheep have been reared in the Mont Saint Michel Bay since the 11th century. As a result of of the huge bay tides around Mont Saint Michel, the vegetation has adapted to life both above and below sea level. The subtle taste and tenderness of the meat from the lambs comes from the unique plants which thrive in environments with very high salt concentrations. The lambs graze in the salt marshes every day. We encountered this large herd of salt marsh lambs on their way home near sunset.
Agneau de Pré-salé, or Salt Marsh Lamb, is tender and delicious, although not salty. We dined on this local delicacy one evening in Mont Saint Michel.
