The Flavors of Curry

"Grandma" opens her spice tin and describes the seven spices that go into traditional Malay curries: cardamom, chili powder, tumeric, cumin, coriander, red pepper, and crushed bay leaf. I can still smell the pungent aroma of curry and hear the sizzle of the roti cooking in her kitchen in the Bo-Kaap community of Cape Town, South Africa.
