Fresh October Beans

Most people that did not grow up in The Southeastern United States have never heard of or seen October beans. Many people from the southeast have never heard of them either. When the shelled beans are cooked, they turn into a light brown color. The flavor is similar to a pinto bean but less intense and a bit sweeter.
