Apple Slices

We have a glut of wind-fall eating apples at the moment. These have been washed, peeled and sliced, discarding the damages parts, ready for microwaving in a suitable bowl with a small amount of water if needed to make some steam. I cook them down, stirring occasionally, then cover with clingfilm, cool then either storein the fridge or freeze or use straight away to add to fruit such as plums or blackberries to make jam. The pink fleshed variety is 'Discovery'. To make a quick dessert gently simmer down a few eaters in a pan with some honey. No other liquid is needed. Great with custard, ice cream, creme fresh or cream or made into a pie or crumble. The world is your apple!
