Chickpea, Tofu and Onion Curry with Dhal on Rice — #Vegan #Indian

Had some delicious dhal and curried vegetables at a friend's place recently. It was so good I had to make some more myself. Along with a chickpea, onion and tofu curry and some jasmine rice I had left over, I served it with some warmed chapati I bought from an Indian grocer. The flavour base began with cumin seeds, fresh ginger, garlic, chilli pepper, a little garam masala, powdered coriander, turmeric, smoked paprika, bay leaf and a couple cloves. Then sliced onion, diced tomato and small splashes of water. Finally the tofu and chickpeas which I fried/stewed in the gravy for about 15 minutes, turning and moistening with water occasionally. Fresh chopped cilantro was added to the dhal and chickpea/tofu in the last minute or so. Of course for me, there had to be a big spoon of hot mango pickle on top.

 

All #vegan. It's a matter of fundamental justice that no animal is subjected to misery and death for our pleasure.
