Alinea puts a lot of effort into integrating service with the food. Most other restaurants simply put food on dishes, but the serving ware here is really tailored for the food (or vice versa).

 

Prior to this was a "distillation of thai flavors" that nobody photographed. It was a glass with extract of fish sauce, thai chili, basil? that switched our gears to Asian mode. A bit like hard liquor without alcohol, leaving you to savour the plant flavors.

 

Condiments for the berkshire pork belly. This was a hands-on activity which made the meal pretty fun.

 

Lava salt, iceberg lettuce with cucumber juice (looks like honeydew!), fried garlic, japanese pickle?, lime, coconut ribbon, shallots, cayenne chili pudding.

Then passion fruit seeds?, microgreens, cashews.
