mistake gone right
Whipping cream pancakes
let me preface this with......I had heavy cream in the house (3 pints) to make ice cream.......planning on still making some soon!

they were sooo good
I was out of milk and my buttermilk had gone soooo bad.....my options were soy creamer or whipping (heavy) cream
so I invented a recipe that worked
1 cup whipping cream
1/4 cup simple syrup
1 T vanilla
2 eggs
2 T baking powder
1 cup flour (I used all purpose)
1/2 t salt
juice of 1/2 a lemon
I usually mix the batter first and let it sit/soften the gluten about 20 minutes or more
when the batter did not look bubbly like it normally does I thought i was doomed
BUT i think the larger fat molecules of the cream might have inhibited the baking powder from festering
so I proceeded to cook just one pancake to test it and it sure rose on the griddle and acted nice and fluffy....I flipped it without a tear or losing any batter.....and then after it was done cooking.....I tasted it without syrup...and YUM
so I made some maple butter syrup and sausages and the batter made 8 large pancakes!
