panko crusted baked cod fillet with lettuce on sourdough

 

I had a soudough baquetter and i only had about 6" left so I cut it in half lenghtwise and then into thirds thickness way....leaving you two inner slices ...enabling me to make 3 sandwiches from that one 6" section

 

i was proud of my bread usage!

 

these were soooo good

 

I also made homemade tartar sauce..........diced capers, diced sweet and dill pickles (homemade), lea and perrins, tumeric, white pepper, celery seed, salt, grated onion all mixed into some mayo.....let it chill for about 4 hours in the fridge to infuse the flavors....then this morning I used the leftover tartar sauce as the base for egg salad, adding 2 1/2 hard boiled eggs that were roughly chopped......and diced onion and some chopped parsley as well

 

plan on having the egg salad on the homemade telera rolls!!!
