FRESH PEAR CAKE

This one is for Mustangaly.

 

Preheat oven to 350 degrees

 

1 1/2 cups Cooking Oil

2 Eggs

2 cups Sugar

In a large bowl add first three ingredients and beat well.

 

Then add:

2 tsps Vanilla Flavoring

 

Combine the following dry ingredients and add to the liquids: Mix by hand until throughly mixed. Batter will be very thick.

3 cups All Purpose Flour

1 tsp. Baking Soda

1 tsp salt

1 tsp. Pumpkin Pie Spice

 

Then Add:

3 cups chopped Fresh Pears

1 cup chopped Walnuts

 

Pour into a well greased Bundt pan sprinkled with flour. Bake 1 to 1 1/2 hours or when toothpick inserted comes out clean. Let cool in pan before removing cake. This is very important for it is a very moist cake.

I like to refrigerate mine in a covered cake plate. May be served with whipped cream if desired. Enjoy
