40-day olives

Recipe comes from Kevin Gould's gorgeous cookbook, Loving and Cooking with Reckless Abandon. The lemons are from the farmer's market. The mint is from our garden. The olives, alas, are from the supermarket, but next time I'm waiting until I can get some olives at the Milk Pail.
