CRAB POTATO SALAD RANGOON IN CUE-CUPS

This was my July 2013 Reeser's Potato Salad Challenge entry. I made a dressing based on my most requested deviled egg recipe and added Thai seasonings and lump crab meat and finely diced baby medley potatoes, onions, cleery root and pancetta, amongst other secret ingredients. They're served in edible cucumber cups and garnished with micro greens and dyed hard boiled egg whites on the side. These were delicious!
