Salt has been harvested in Sicily from Phoenician times (ca. 2700). The production from these pans reached over 100,000 tons per year in the 1860's and was shipped all over Europe. Its use was key in preserving foods before refrigeration. Sicilian salt is produced today by the same methods, but production is much smaller and focused upon the gastronomic market due to its unique mineral content and taste. The windmills, used to pump water from pond to pond, have been replaced by mechanical pumps.
