Corn Chowder
Day Five
I'm a fan of corn chowder. This one is nice in that it is simple, isn't too rich and tastes, you know, like corn. Where the flavor is corn driven, the texture is poatato driven. I call that a winning combination.
Ingredients
3 tbsp butter
1 sweet onion (chopped)
3 cloves garlic (minced)
1/4 c flour
1 qt vegetable broth
Heavy pinch of salt
1/4 tsp pepper or to taste
3 yukon gold potatoes (well diced)
1 cup heavy cream
3 c corn
2 tbsp chives
Directions
Saute onion and garlic in butter until onions are translucent. stir in flour until integrated. Add vegetable stock, salt, and pepper and bring to a boil. Add cream and potatoes, return to boil for 10 minutes. Add corn and chives and reduce temp to simmer to cook 10 more minutes. Soup's on.
