Monitoring Japanese stock with Arduino Uno

Monitoring Japanese stock (dashi) with Arduino Uno R3 and thermocouple. Kitchen folklore says that boiling the dashi ingredients leads to bitterness, so the sensor and electronics alert me when the dashi temperature reaches 180 F.
