turkey/beef/pork boulettes with stewed vegetable
meant to do a pot au feu again, but the pressure cooker did a surprisingly comprehensive job breaking down the turkey drumsticks, beef shanks, and pork necks. I guess i could have just pulled the meat and tossed it with a little vinegar but instead i mushed it down with some eggs, onion, bread cubes, garlic, half a red chili pepper, and some parsley and formed a bunch of boulettes. while the meatballs baked, i made a quick stew with an onion, a couple carrots, a couple potatoes, a couple stalks of celery, a fennel bulb, the other half of the red chili pepper, and some of the (awesome) stock i got from pressure cooking the meat.
