Ten minutes before the last rest is over, set your oven to 425º and place your dutch oven with lid in and let it get nice and hot. Do not oil the pan- your loaf will not stick! When rest time is over, take the lid off and dump the dough in and shake the pan if you have to to distribute the dough. Cut the dough with a knife or scissors (it will let the loaf expand without ripping), replace the lid, and let it bake for a half hour.
