lard breadcrumb carbonara

you heard me right...

 

i thought it might be interesting to toast breadcrumbs in lard, a little butter (to smooth it out) and a good pinch of berbere to replace the bacon in a spaghetti carbonara. i whisked a mixture of a raw egg, parsley, parmesan, salt, crushed red pepper, and a splash of cream together, and tossed that with spaghetti hot out of the colander, and once nicely mixed, toss that with the breadcrumbs, finishing it with more breadcrumbs, cheese, and parsley when i dished it up. it does add a nice crunch without being as overbearing as bacon ( i'm not wild about the smokiness of it in something like this).
