ugly mozzarella

Alright. Cheese report: I followed the directions exactly and I got the kind of fresh mozzarella you can buy in the store that has very little flavor and a kind of bouncy texture. I don't prefer this kind of mozzarella. I like the slightly older kind that is kind of dry and that most food-obsessed-people deplore.

 

A lady at one of the Portland farmer's market was selling some mozzarella cheese in curd form that tasted EXACTLY like that packaged kind (the brand I usually buy is "Precious") but it tasted even better. The texture was firmer than the spongy fresh mozzarella that weird people love so much.

 

Yes, I probably mean all of you.

 

So if you want to get the kind of fresh mozzarella that most people love, I can say that it's not that hard. Although I admit that I didn't get the hang of shaping mine. They look pretty ugly.

 

But if you like the kind of mozzarella I do, which only me and uneducated food palates will admit to liking, then this didn't turn out so well.

 

More experimenting is called for.

 

The process was really not difficult though and that's the good news for most people. People who aren't me.
