A longitudinal section through an avocado ovary is a good example of the final phase in angiosperm reproduction, the fruit to seed phase. After the flower is fertilized, the embryo begins to mature and transform into the seed while the ovary wall develops to form the fruit. Depending on the type of avocado, it can take from 6 to 18 months for the fruit to mature.
I believe that the developing fruit has two primary functions. The first is to house and protect the seed and the other is to assist in the process of seed dispersal. In my opinion, the flesh (mesocarp) of the fruit has evolved to become as delicious as it is today because it is such a successful method for seed dispersal. Avocados are cultivated all around the world today because of their creamy center, and in a way insures the survival of the avocado.
