Chicken Tikka Masala

Recipe :

Boneless chicken breast -- 1lb cut into bite sized pieces

White onions (medium) --2

Hunts tomato phaste _1 Small can

Chicken tikka masala (shan ) -- 2 tbspns

Red chilli powder 3/4 tspn

Ginger --1/2 inch piece

garlic --4 cloves

Dried methi leaves 1 tblspn

Cashew nut -5

Salt to taste.

 

Preparation :

Marinate chicken breast with 1 tblspn chicken tikka masala and 1/4 tspn lemon juice for 1/2 hr. In a broad saute pan , heat oil and saute the chicken pieces for 10 mins till it gets slightly browned. switch off the flame and set aside.

 

Chop white onions in big chunks , add cashew nuts and 1/2 cup of water in a sauce pan.Cook on a medium flame for 10 mins. Remove from heat and set aside. when it cools down puree it on a blender along with ginger and garlic.

 

In a big saute pan, heat 2 tblspn olive oil and add the onion puree . Saute well for 5 mins add hunts tomato phaste and mix well . Add 1tblspn tikka masala , chilli powder and salt. Saute well for 5 more mins add 1 cup water. When it boils add the broiled chicken pieces, dried methi leaves .Reduce flame and cook it for another 10 mins. Switch off the stove add 2 tblspn unsalted butter and 1 tspn tomato ketchup. Serve after 5 mins. Goes well with Nan.
