Pasta alla carbonara is an Italian pasta dish based on eggs, pecorino romano, guanciale, and black pepper. This recipe is from Rick Stein where pecorino, egg yolks, cured fatty pork (pancetta) and black pepper are the basic. Cream is not used in Italian recipes, but is used in the United States, France and the United Kingdom
