This annual is native to Southern Europe, North Africa and Western Asia, among other regions. The flowers and leaves have a cucumber-like taste.
Borage flowers are used to flavour salads and cold beverages. They are candled and used to decorate deserts. The leaves are added to soups, yoghurt, salads and cheeses. Borage is often eaten raw, although it may also be cooked like spinach. It loses its flavours when dried.
