Recipe twenty seven

Eggplant, chopped & steamed in a pan with sauteed garlic and olive oil, then mixed with bread crumbs, eggs, parmesan cheese, and parsley, rolled into balls (clearly that part I didn't do so hot on) and baked in the oven. If I make this again, I will dice without the peel, and dice small, then try to mash it all a little more thoroughly.
