Lamingtons - As Aussie as Vegemite - or are they?

- The chocolate coating on the first lot was too thick.

So, we ate the Lamingtons as quickly as possible in order to make a second lot.

 

- The second lot looked nice and golden in the oven.

Alas,

I forgot to add baking powder and the slab of cake was almost rock hard. I suppose, I could have kept them as teeth shattering cookies, but thought they were less trouble in the bin.

 

- This, the third lot, looked and tasted just right.

For this lot, I changed the chocolate coating from water, cocoa powder and icing sugar, to about 150mL of milk, 200g good dark chocolate, icing sugar and some hot water to make it a bit more runny. This worked well and appears to be less sweet.
