Baked Brussels sprouts with garlic & cheese (Vegans/plant-based: Omit the cheese)

PA160496

Vegetarian (Vegan without cheese)

Cheese is not really 'necessary'. The parts without the cheese tasted delicious!

Today, I tried a small dish of baked Brussels sprouts. To my surprise, this is edible, even to this "not-so-fond-of-Brussels sprouts" eater.

Vegan recipe:

I bought a bag of Brussels sprouts and then searched for a recipe that looked appealing.

This is very easy to make and is a good side-dish. I'll make this again one day, omitting the cheese, adding some sliced red onion instead, as suggested in the recipe. I added plenty of chopped garlic. We love baked garlic!

A little bit of lemon juice added some nice zest to the dish.

Also, I think the next time I am making this, I am going to garnish this dish with some slivered toasted almonds or pine nuts. I have the 'feeling' (haha... feeling ...) toasted almonds or pine nuts not only will look nice, but add some more crunch and may (hopefully) work well and taste good together with the Brussels sprouts.
