Mushrooms, chickpeas, baby spinach, tomatoes, onions, garlic, pepperflakes, ginger, cashews, spices = goodness simmered in a pot and served with rice, flat bread or another grain, garnished with fresh coriander leaves.

 

(I grind my own Garam Masala. This is much better than the store bought Garam Masala which often contains rice flour)

 

I overcooked the rice a bit :/

 

We love the flavours of India and, especially, just about everything is cooked with fresh ingredients and from scratch.

 

I added a couple of portobella mushrooms, including the gills, which may be the reason the curry turned a bit brown. Also, my blender does not blend nuts very smooth. However, the little crunch in the sauce does not bother us. I actually quite like it :)
