The solution came in the form of Gorm shelves from IKEA, which are easy to shorten.
Here's the end of one of the shelves, clamped into my workbench. You can see that the shelves are just 3 slats of pine board (or 5 slats for the deeper shelves) nailed onto an end piece. The end piece is drilled with holes at its ends, to allow assembly of the shelves.
I measured the shelf compared to the space I had, and here you can see I've already marked off how much I needed to shorten the shelf.
