Minestrone verte printanière - Spring Green Minestrone

It is no surprise that I am fan of Italian food, and rustic looking soups. Minestrone is elegant and down-to-earth at the same time. The Genoese version is a favorite of mine because of the pesto. Eaten cold or warm.
