Cauliflower and corncakes

So, the creamed corn from the last post got added to a veggie mash and then shallow fried to make little savoury cakes.

 

I could have just used mashed potato but have done a bean and cauliflower base here.

 

Cook up a can of white beans and a head of cauliflower. Drain well. Blend to a paste, and if needs be (I needed to do this) pop back on the heat to remove some moisture if it looks too wet.

 

Add flavour - I was going for a cauliflower cheese feel so used dijon mustard, two heaped TBSP nutritional yeast, salt and black pepper.

 

Let cool. Add the creamed corn. Mix and form into 12 blobs, or more if you want smaller cakes.

 

Put some flour (I used spelt, as that's what I had) on a plate and cover the blobs, patting them down into patty shapes. The flour will also help the mix firm up.

 

Shallow fry until golden brown on both sides, put on kitchen roll to soak some of the oil.
