Cast Iron Griddle Temp

I found the key to getting a great crust is a really hot oven. First set the rack approximately 5 inches below the broiler (on our oven that's the 2nd position from the top). Using my Reversible Pre-seasoned Cast Iron Griddle, set the oven to 550 degrees F, this may take a while. Once the pizza is in, switch to broil, this ensures both the top and bottom finish at the same time.
